Do you ever just stop and thank the universe for banana bread? No? I love it. It's one of my favorite foods. It's so easy to make and it makes a delicious multi-food. You can eat it for breakfast! Snack! The possibilities are endless.

One of my favorite things to do with banana bread is to spread it with peanut butter and make a Peanut Butter and Banana Bread Sandwich. One of my closest friends, B, suggested making Banana Bread French Toast. Don't you see? The possibilities are endless.

Now, I have scoured the web many times for banana bread recipes, and I will tell you that it took me forever to find the right one. You see, most of the recipes I was seeing called for 3 bananas. Alas, I usually only have 2 ripe bananas lying around. Don't ask me why. Even when I try to save 3 bananas specifically for bread, I end up with less than.

So one stoney evening, while dreaming of moist and delicious bread made from ripened fruit, I took to Google to find a recipe. Only this time, I made the decision to use a very specific search phrase: "banana bread recipe with two bananas". Amazing. What stood before me was a well known brand, Pillsbury.

I'm telling you right now, they must have rocket scientists working for them. Their recipe is like none other. You can check it out here, or you can follow along here on my page.

The Best Banana Bread You'll EVER Make Ingredients:

3/4 cup sugar

1/2 cup (one stick) butter, softened

2 eggs

2 ripe bananas, mashed

1/3 cup milk (any, we used whole)

1 tsp vanilla extract

2 cups flour

1 tsp baking soda

1/2 tsp salt

1) Preheat oven to 350 degrees. Grease only the bottom of a bread pan.

2) Beat softened butter and sugar together with a rubber spatula in a large bowl until light and fluffy.

3) Whisk eggs into the butter and sugar until well combined.

4) Add mashed bananas, milk, and vanilla extract to the wet mixture. Stir until combined.

5) In a separate bowl, whisk together flour, baking soda, and salt.

6) Add dry mixture to the wets and stir until combined.

7) Pour batter into bread pan and place in the oven. Set a timer for 50-60 minutes.

I sometimes find that my bread needs a little longer in the oven. Always stick a toothpick in the middle of your banana bread to make sure it is fully cooked before shutting off your oven. If your toothpick comes out with batter on it, continue to bake for 5-7 minutes at a time until the toothpick comes up clean.
